●TOMATO NO TSUMETAI
SU-PU-----Creamy Cold Tomato Soup

<Ingredients (for four)>
600g tomato
1 clove of garlic
80g onion
2 cups water
1/3 cup heavy cream
4-5 fresh basil leaves
1 tablespoon sugar
salt
pepper
1/4 cup olive oil
1)Boil and remove the skin from tomatoes. Then mince
the tomatoes after
they are seeded.
2)Heat the olive oil in a pan, and add the garlic and
onion. Stir until they
give aroma and saute until the onion becomes translucent.
Then add the
minced tomatoes and season to taste with salt and pepper.
Add water, and
simmer for 30 minutes uncovered over medium heat. Afterwards
add one
teaspoon of salt.
3)Remove from the heat. Pass the soup through a food
processor and cool
the pureed soup in a bowl. Adjust the flavor by adding
one teaspoon of
sugar which makes the flavor milder.
4)Add the heavy cream to the soup and garnish with chopped
basil.
